It started with a food truck.

Oscar Cuevas spent over twenty years learning his craft in a Japanese kitchen and he never stopped cooking the Mexican food he grew up on. In 2019, Oscar and Claudia opened their first food truck. Word spread fast. By 2023, they'd opened the brick-and-mortar Taqueria Cuevas right here in Ignacio.

Today, the truck still rolls to farmers markets and wineries. The restaurant is where a perfectly grilled al pastor taco and a bowl of tonkatsu ramen come from the same hands, the same heart, and the same obsession with doing it right.
