Cuevas Tacos was founded in 2019 by Oscar and Claudia Cuevas, who started with a humble food truck. Since then, it’s become a beloved local staple, known for serving up some of the tastiest and most delicious Mexican street food in the entire Southwest.

In 2023, the Cuevas family expanded their passion for great food with the opening of Taqueria Cuevas in Ignacio, Colorado. This cozy spot has quickly earned a reputation for its bold flavors, generous portions, and friendly vibe—and it's always buzzing with hungry, happy customers.

From mouthwatering tacos and overstuffed burritos to tortas that are bursting with flavor, everything we serve is made with love and traditional ingredients. Don’t just take our word for it, come try it for yourself!
